Today's dinner was delicious! And all my own invention!
Ingredients:
2 wholemeal pitta
1 large tin of chopped tomatoes
1 small tin of tuna in brine, drained
30g of sweetcorn
60g cheddar cheese
2 pinch basil
2 pinch oregano
2 pinch black pepper
1 tbsp balsamic vinegar
2 pinch sugar
Recipe:
1. Preheat oven to 180C.
2. Slice the pittas in half sideways. Place in oven to harden.
3. Heat chopped tomatoes in saucepan; the aim is to reduce the liquid.
4. When tomatoes are quite reduced (think thick soup consistency) add sugar, tuna, balsamic vinegar, oregano, basil, and pepper. Stir thoroughly for 5 minutes.
5. Remove pittas from oven.
6. Spoon sauce onto pitta bases until all sauce is used up.
7. Grate cheese and sprinkle onto sauce.
8. Stick in oven for 15-20 mins, or until cheese is gooey.
9. Serve with salad.
